In 2012, Frédérique Jules opened her first gluten free restaurant in Paris inside the famous Passage des Panoramas. Meanwhile in the same Passage, Guillaume Guedj is a successful restaurateur in Paris with Passage 53, a two Michelin Stars Parisian gem. A couple of years after meeting for the first time, the two combined their talents for the Noglu Saintonge Project.
What they have in common : love for food and the USA, where each of them spend a good amount of time every year; especially New York and Los Angeles. The Open mindedness in these cities and the growing demand for healthy yet tasty cuisine pulls Guillaume and Frédérique to mix-and-match healthy conscious cuisine and the gastronomic knowhow.
